Award winning dinner in my house alert! Saw these "Baked Chicken Meatballs," pop into my feed from Dinner At The Zoo and I had to try them, with a few little twists. Now, let me tell you, I always make enough guys! But, not this time guys. With two pounds of meat, I was sure I could stretch this meal to two nights but this just wasn't the case. After prematurely freezing half, before I knew it, everyone was asking for seconds. It's like the best and worst and feeling all at once. I made a batch of pasta wheels and BANZA
Serves - 4 (adapted from Dinner At The Zoo)
Ingredients
-2 pounds ground chicken, lean
-1 egg, beaten
-1/3 cup ground parmesan or veggie parmesan
-2 tablespoons olive oil
-1 teaspoon GOYA adobo seasoning
-1 cup Panko bread crumbs
-2 garlic cloves, grated
-1 teaspoon dried Italian seasoning
Optional Pasta: Wheels, Spaghetti, Banza, veggie noodles
Directions
1.) Preheat the oven to 400 degrees and line a baking tray with foil or parchment paper.
2.) In a large bowl mix together all ingredients by hand. (At this point you can put in fridge to set)
3.) If you have take an ice cream scooper, scoop onto baking tray or roll into balls.
4.) Bake for 20 minutes until golden and serve with pasta of choice.
