"It's all about the sides!" Fine, we are still a few months away from Thanksgiving, but *Summer Sides* are certainly right up there! Let's start with the almighty BBQ, shall we? Those burgers and drumsticks need some solid company my friends and moving right along, these dishes happen to make a delicious vehicle for any work day lunch. Not to mention, I've most certainly caught Eric grazing these containers for a quick afternoon snack! Now, don't get caught up in the ingredients here, we aren't baking from scratch here!
Side #1 Honey Mustard Cauliflower Steaks
Ingredients
1 head cauliflower sliced into flat steaks
1/4 cup Dijon or Stone Ground Mustard
2 tablespoons honey
Directions
Preheat oven to 425 degrees. Whisk mustard and honey together. Spray a large pan and cauliflower with cooking spray and brush on mixture. Roast for 30-40 minutes until golden and serve. Sprinkle with salt and pepper if desire.
Side #2 Sesame Green Beans
Ingredients
1 pound string beans washed and trimmed
2 tablespoons dark soy sauce
1 tablespoon sesame oil
Directions
Boil beans for 2-3 minutes until tender-crisp and plunge in ice water. Heat sesame oil in a skillet over medium heat and add soy sauce. Cook for about 2 minutes and if you have add sesame seeds on top! Not imperative!
Side #3 Cabbage Slaw
Ingredients
8 ounce bag coleslaw mix OR chopped cabbage of your own
1/3 cup light or olive oil based mayo
1 tablespoon apple cider vinegar
Directions
Whisk together mayo, vinegar salt and pepper. Combine with slaw until evenly coated. Store in air tight container and season with more salt and pepper as needed
